What is image dithering?

Dithering reduces the number of colours or tones in an image while keeping the illusion of detail by arranging the remaining colours in a fine pattern. It is how old 8-bit games, e-readers, and printed newspapers show shades of grey using only black and white dots.

Which dithering algorithm should I choose?

Floyd–Steinberg spreads the error to neighbouring pixels and gives the smoothest, most photographic result. Ordered (Bayer) uses a fixed grid for a clean, regular retro look. Atkinson keeps highlights brighter and is the classic early-Macintosh style. Try each and pick the look you like.
